Pita Pizzas

The weather has finally been nice here and we're taking full advantage of it! Lots of walks and bike rides and stops at the playground. Of course since we've been taking advantage of the nice weather and spending so much time outside I've neglected a lot of the indoor stuff that still needs to be done so I spend evenings trying to catch up on all of that. I'll be glad when school is done - we are all looking forward to a break! I'm tired of the same get up, make lunches, get out the door routine and I know the kids are too. Bring on summer!

Due to my daytime laziness we've been in need of some quick suppers. I've been keeping a lot of salads on hand in the fridge (bean salads, grain salads, green salads, etc) and veggies and dip too and something that has been popular lately had been pita pizzas.



Heres a picture of mine from the other day. It has sauteed organic mushrooms, olives, yellow peppers, onions, pineapple and fresh tomatoe slices all topped of with pepperjack daiya. If you have not tried the pepperjack daiya yet get thee to the store stat! Its fantastic on pretty much everything and makes the best nachos ever!



I like to make my own pizza crust but I find it so simply and handy to have some whole wheat pitas on hand (I usually keep a pack in the freezer) and they make a nice personal size pizza that everyone can personalize themselves.

Strawberry Cupcakes with lemon frosting

I made these cupcakes for Easter. They are the Strawberry cupcakes from The Joy of Vegan Baking. I made the buttercream frosting in the book to go with them and made it a lemon buttercream by adding so lemon zest and lemon extract. It was a great combo and all the neices loved the butterfly decorations and of course the sprinkles - no cupcake is complete without sprinkles right?!


Good Friday before Easter my sister had a little easter party at her house for all the kids and wouldn't you know it - the Easter Bunny showed up for a little visit! The kids were so excited they were jumping up and down and screaming - it was funny to watch! Of course the Easter bunny brought some treats for them. The girls got a few vegan goodies.


Meals lately have been pretty simple. Kids are really digging sandwiches lately which is fine by me! Below is my sub - hummus, guac, lettuce, onion, tomatoe, green peppers, cucumbers, black olives and pickles. And because it was a friday night and we felt like a treat we had a side of sweet potatoe fries.


I've been trying to keep some quick meals in the fridge to make life a little easier. We've been munching a the quinoa, mango and black bean salad for the last few days and I just made the white bean and artichoke salad tonight for Color Me Vegan which is actually the first recipe I've made from this book even though I've had it since Christmas! I'm sure it will be great though because Colleen's recipes have never let me down!

Happy Mothers Day!

Look what I got for Mothers Day....



A new yoga mat! I don't think I've ever mentioned on this blog before that I practice yoga almost everyday. I also try to take a class once or twice a week but this past year it was tough with everything going on here so I didn't make it out to any classes. Now that everything is calming down I'm looking so forward to going back to some classes! So when my husband asked my what I wanted for Mothers Day this year I mentioned that I had my eye on this new yoga mat and I am in love with it! Its pretty heavy but its nice and thick and its really slip resistant and I'm looking so forward to using it!


In January I mentioned that my goal this year was to get back to basics and that is what I have been busy doing. I had a huge garden at my old house but when we moved here there was nothing so this year I decided that there was definitely going to be a garden so I've busy sourcing out organic heirloom seeds, building supplies, and of course this......



A composter! I've been wanting to start composting for a long time now so I did some research and found this composter which I think will work great for our household. For me the big advantage with this composter is that there is no turning of the compost. You just open the lid to add your compostables and compost comes out the bottom. You can also collect the compost tea and use it (diluted with water) for your flowers and grass.

I have a lot of pictures saved up from the last couple of weeks so I'll be back with a big catch up post!
