Banana Crumble and sick, sick, sick!

We seem to be in this really weird weather pattern lately - really cold temps for a few days then really warm (relatively speaking) temps for a few days. On one hand its great to have a break from the cold but on the other hand it feels like mother nature is taunting us with a little taste of warm weather. Lets just say I'm really looking forward to spring!


Last cold snap I felt like a comfort meal and had some extra time for dinner prep that night so I made some mashed potatoes and mushroom gravy (from the vegan table - best gravy ever!) and served it with some veggies, salad and dr preggers california burgers. But these weren't your average mashed potatoes - these ones had a special ingredient in them that made them extra creamy and delicious. And that secret ingredient was beans! I put half a can of navy beans in the food processor and added a couple of tbsp's of water and blended it all up. Then i added the bean puree to the mashed potatoes along with some roasted garlic. The bean puree adds a really creaminess to the potatoes - almost reminiscent of cream cheese. Give it a try - you won't be disappointed!









Ollie got struck down by some sort of stomach bug Wednesday night. She was complaining of a sore knee when I put her to bed and once she fell asleep she was tossing and turning a lot. She woke up whining around 11 pm saying her knee hurt. I rubbed it a bit and told her a good sleep would fix it but I could still hear her tossing and turning in her bed and I knew it was her stomach that was bothering her. I asked her if she was gonna throw up and she said no. 10 minutes lately we heard some nit great sounds coming from her room. We ran in and sure enough she had puked everywhere. We stripped her bedding and I gave her a bath (had to wash her hair and everything) and when we remade her bed I layered lots of towels on the mattress incase she was sick again and couldn't make it to the bathroom. Good thing I did that because she was sick all night long. We went through every single towel we own - even the beach towels! Thankfully she seemed to be feeling better in the morning. She rested on the couch the whole day but she kept some bland food and water down.

She's feeling much better today and eating normally which is good because we had a lot to do today. We left early this morning to go get a birthday present for a party tomorrow and then we had to go to Planet Organic. Dino kale was on special so I grabbed 3 heads and a bunch of other stuff and the kids picked out a new cereal to try (Love Crunch from Nature's Path - chocolate chunks, strawberries and raspberries with coconut and flax granola. It has to be good right?!) then we headed over to save on foods to finish off our list. Then the poor car was in serious need of a washing so we did that then we headed home. I spent the afternoon washing and chopping kale, carrots, broccoli, etc.

Off to swimming lessons then we're relaxing tonight. Got a big tomorrow with the birthday party!
