Gabbie got sick on the 23rd with a 24 hour stomach bug. She was feeling well enough to come to my Mom's on Christmas Eve and when we were there she really pepped up (almost 24 hours on the nose!). Normally we have a big supper on Christmas Eve but this year we decided to do snacks instead. For the vegan fare we had 2 bean chipotle lime hummus, roasted garlic hummus, cheese and salsa dip made with cashew cheese, veggies and dip, fruit, and an incredible hot artichoke dip - I had high hopes for this dip and it blew me away! Really easy to make and so tasty - everyone loved it! It was a really relaxing night - we opened presents with the kids and played games with them then they kicked us out so they could play by themselves so we watched a Christmas classic- National Lampoons Christmas Vacation - and my Mom, Dad and I enjoyed a nice pot of tea. For Christmas I bought my Mom this mug as well as a good selection of caffeine free teas. We tried the Forever Nuts tea on on Christmas Eve and it is outstanding! I'm not really a herbal tea drinker but I'm going this week to buy a tin of this one its a perfect caffeine free tea!
Christmas Day we woke up around 8 and opened presents. We got a cuisinart griddler (we love grilled veggies and paninni sandwiches!) and I got a copy of Colour Me Vegan and Appetite for Reduction. I also got the same travel mug as my Mom and some new teas (Love Tea #7, Chocolate Mint Rooibos, and the Organic Sencha) as well as some paperbacks in a few different series that I collect. The big family gift for us this year was an ipad. So far I love it but I haven't had much time on it - everyone else is using it 24/7 it seems. Then we went to my inlaws. My husband is the youngest in his family by a lot so the kids on his side are a lot older. It was quieter than at my Mom's but a lot of fun too.
And of course we are still renovating and we had carpet being installed last tues/wed/thurs. Wow thats a lot of work! We had to move all the furniture from one side of the house to the other, then over to the other side, take apart beds then put them back together, blah blah blah. I'm glad its done! I'm also really glad my nephew is a firefighter and works out everyday...he used all those muscles to help us move our furniture around! Thanks Rene!
New Years Eve day we did some errands then took the kids swimming. After that we headed home and made supper (grilled portabella mushrooms on the griddler - works fantastic!, steamed brown rice, and a spinach salad) had some dessert (vanilla bean coconut milk ice cream with strawberry rhubarb sauce) watched Toy Story 3 with the kids, put them to bed then we cuddled up on the couch with our blankets and books and put a movie on for us. We didn't watch much of it - too busy reading. Then we headed to bed ourselves. Not the most exciting night but after all the craziness this past week it was nice to park our butts on the couch for the night and do NOTHING!
And thats it! Thats all we've been up to the last 2 weeks.
Ok New Years Resolutions. I don't make them per se I set goals for the up coming year. This years goal - get back to basics. I want simplicity in our lives - from meals to stopping to enjoy what we have. We've been going at an unreal pace for the last 6 months or so and its time to stop and just enjoy our family and friends. I have some changes I plan on making in this house in the upcoming year and I'll share them with you as I go along. I'm looking forward to a happy and healthy 2011.
